Sautéed Shiitake Mushroom Recipe

Serves 4
Components:

  • 1 kilo of organic Shiitake mushrooms
  • 2 cloves garlic, coarsely chopped
  • 3 tablespoons chicken or vegetable stock
  • 2 tablespoons of extra virgin olive oil
  • 2 tablespoons fresh rosemary
  • 2 tablespoons fresh oregano
  • Salt and pepper to taste

Directions:

  1. Prepare the Shiitake by removing the stems and slicing the caps off the mushrooms.
  2. Heat the stock in a pan and then add the mushrooms and garlic. Steam under a lid for a few minutes or until the mushrooms are soft.
  3. Remove the lid and then cook until the stock has evaporated and the mushrooms are lightly browned.
  4. Transfer the mushrooms to a bowl, then toss with olive oil and fresh herbs. Season with salt and pepper to taste, serve and enjoy!
