lion’s mane (Hericium erinaceus) is a great mushroom to include in your diet. With a texture and flavor that translates well to seafood recipes, the Lion’s Mane mushroom is the perfect substitute for lobster, crab and fish. It is considered a gourmet mushroom in many high-end restaurants.

Lion’s mane is not only a tasty treat, but it can also support the immune, digestive and nervous systems.* Lion’s mane is one of the most well-known mushrooms for promoting healthy brain function.* Studies have shown that this mushroom supports memory retention and helps promote concentration.* Because of the way the mushroom supports nerve growth factor to support the growth of healthy neurons, lion’s mane can be very supportive of overall cognition mode.*

Here are six recipes to try to get the most of the health benefits of lion’s mane.* Enjoy these recipes while also promoting brain power, clarity and focus with this wonderful mushroom!*

Lions Mane in nature

Lion’s Mane Crab Cakes

Makes 6 servings
Components
:

  • ⅓ cup mayonnaise
  • 1 large egg
  • 2 tablespoons Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 2 cups of dehydrated Lion’s Mane mushroom chunks
  • 1 diced red pepper
  • 1 onion, sliced
  • 2 cloves of garlic, finely chopped
  • ½ cup flour or breadcrumbs (optionally gluten-free)
  • Lemon juice, to taste
  • Salt and black pepper to taste

Directions:

  1. In a small bowl, whisk together mayonnaise, egg, mustard and Worcestershire sauce.
  2. In a large bowl, add the Lion’s Mane mushrooms with the pepper, onion and garlic. Mix with flour or breadcrumbs, salt and pepper. Mix the ingredients in the small bowl.
  3. Use the mixture to form about 6 patties.
  4. Coat a large frying pan with oil and heat over medium-high heat. Add the cakes and cook until golden brown and crisp, a few minutes per side.
  5. Enjoy the health benefits of Lion’s Mane when you enjoy these cakes with lemon juice or another favorite topping!*

Lions Mane Crab Cakes

Lion’s mane fillet

Components:

  • 1 pound Lion’s Mane mushroom, cut into ¾-inch fillets, pressing off excess water
  • 1 tablespoon of ghee
  • ½ cup dry white wine (or substitute with 2 tablespoons dry sherry)
  • 1 medium shallot, chopped (or substitute with 3 cloves garlic)
  • Salt and black pepper to taste

Directions:

  1. Season the lion’s mane fillets with salt and pepper
  2. Heat the ghee in a large skillet over medium-high heat.
  3. Add the lion’s mane and press down with a spatula to remove excess water. Sauté on both sides until browned and tender.
  4. Reduce heat to medium-low. Add wine or sherry and shallot or garlic, cover and cook until garlic is soft.
  5. Serve with your favorite sides and enjoy the health benefits of Lion’s Mane, delicious!*

Lion’s Mane Clarity Latte

Makes 1 serving
Components
:

  • ½ cup of coffee
  • ½ teaspoon AdaptogenShrooms Lion’s Mane tincture
  • ½ cup milk of choice
  • Dash of cinnamon
  • A pinch of nutmeg

Directions:

  1. Add the ingredients to a blender. Mix on high until frothy and well mixed.
  2. Pour it into a jar or mug and enjoy the health benefits of Lion’s Mane!*

Lion’s Mane “Lobster” Roll.

Components:

  • 2 large eggs
  • 2 tablespoons Old Bay Seasoning
  • 1 teaspoon celery salt
  • 2 tablespoons of lemon juice
  • 1 pound Lion’s Mane mushrooms, cut into ¼-inch slices
  • 3 tablespoons olive oil or ghee
  • ½ cup mayonnaise
  • ½ red onion, diced
  • ¼ cup fresh dill, chopped
  • ¼ cup fresh parsley, chopped
  • ½ cup celery, chopped
  • 4 rolls, hoagie or french (option to serve on salad)
  • Salt and pepper

Directions:

  1. Beat the eggs in a medium bowl. Stir in Old Bay seasoning, celery salt and lemon juice.
  2. Add mushroom slices to the egg mixture and stir until absorbed.
  3. Heat oil or ghee in a large pan over medium-high heat. Cook the mushroom slices, sauteing each side for about 2 minutes. Remove the mushrooms and drain them on absorbent paper. Once cool, shred the mushrooms with a fork or two or your fingers.
  4. In a medium bowl, mix mayonnaise, onions, dill, parsley and celery. Add the chopped mushrooms and mix well. Add additional celery salt and/or lemon juice to taste.
  5. Open the rolls or prepare a salad to serve the Lion’s Mane Lobster. Enjoy!

Suggestion: Add a teaspoon of Tabasco sauce for some punch!

Lion’s Mane Pancakes

Makes 2 servings
Components
:

  • 2 large eggs
  • 1 1/2 cups almond milk
  • 1 ¼ cup flour (substitute for gluten-free options)
  • ¼ cup melted butter
  • 1 cup fresh lion’s mane, chopped
  • Selection covers

Directions:

  1. In a large bowl, beat the eggs and milk.
  2. Add the flour, butter and mushrooms and mix until combined.
  3. Add butter to a skillet over medium-high heat, add ½ cup mixture to pan, and flip when bubbles appear. When both sides are browned, add toppings and eat!

Pancakes

Honeyed Lion’s Mane Mushroom

Components:

  • 1 teaspoon honey (raw & local, recommended)
  • 1 teaspoon of butter
  • 1 cup Lion’s Mane mushroom, chopped

Directions:

  1. Melt the butter and honey together in a pan.
  2. Throw in the lion’s mane and cook for about 5 minutes.

Tip: Enjoy this delicious treat as is or add as a topping to desserts, pancakes, etc.
